Aging
Aging lasts between 10 and 24 months depending on the lot and the wine. Most lots are aged in French oak barrels while others are aged in small stainless steel or concrete tanks.
During aging a certain quantity of wine evaporates: this is the “angels’ share”.
To address this lost, barrels are topped regularly. Every 15 days they are filled, thus avoiding undesirable contact of the wine with the air.
The wines are also racked regularly, every three months.
