Cold settling

   The juice is pumped into small (10 hectoliter) temperature controlled stainless steel tanks.

   The juice is refrigerated overnight between 5 and 6°C.


   The effects of gravity combined with the cold cause sediment to settle to the bottom of the tank. The following morning the clarified juice is racked.


   Thus the juice and the aromas are refined.
