KALIAN’s Bergerac Rosé
Very confidential (about 600 bottles available for sale each year ...), this Rosé is a blend of Cabernet Franc, Cabernet Sauvignon and Merlot. The percentage of these grape varieties varies with each vintage but has always a dominant of Cabernet Franc.
After harvesting by hand (on two different days to respect the optimal maturity of each variety), the grapes are destemmed and berries are transferred by gravity into the press where, after a short maceration of a few hours (with CO2 inerting), they are pressed. The alcoholic fermentation takes place in thermoregulated stainless steel vats at low temperature in order to preserve the maximum of aromas. The aging is also carried out entirely in stainless steel vats with regular lees stirring, in particular at the end of alcoholic fermentation / beginning of aging.
Bottling takes place in March of the year following the harvest. The final dose of sulphites is generally quite low, around or less than 50 mg/l (50ppm).
