KALIAN’s Bergerac Sec
KALIAN's Bergerac Sec is a still dry white made mainly from Sauvignon Blanc. Other varieties used in the blend are Muscadelle and / or Sémillon Blanc depending on the vintage.
After harvesting by hand, Sémillon and Muscadelle grapes are pressed quickly (whole clusters pressing). Sauvignon Blanc grapes are harvested by hand and/or by machine (depending on the vintage) and go through a 48 hours skin maceration step. The alcoholic fermentation takes place in thermoregulated stainless steel vats at low temperature in order to preserve the maximum of aromas. The aging is also carried out entirely in stainless steel vats with regular lees stirring, in particular at the end of alcoholic fermentation / beginning of aging.
Bottling takes place in March of the year following the harvest.
The final dose of sulphites is generally quite low, around or less than 60 mg/l (60ppm).
In 2018, KALIAN produces for the first time a still dry white Bergerac Sec, fermented & aged entirely in French oak barrels for 10 months. This wine is named "du TEMPS au TEMPS".
