KALIAN’s Bergerac Sec
Like KALIAN's Rosé wine, this still dry white is produced in very limited quantities and is mainly made from Sauvignon Blanc. Other varieties used in the blend are Muscadelle and / or Sémillon Blanc depending on the vintage.
After harvesting by hand, the grapes are pressed quickly (whole clusters pressing). The alcoholic fermentation takes place in thermoregulated stainless steel vats at low temperature in order to preserve the maximum of aromas. The aging is also carried out entirely in stainless steel vats with regular lees stirring, in particular at the end of alcoholic fermentation / beginning of aging.
Bottling takes place in March of the year following the harvest. The final dose of sulphites is generally quite low, around or less than 50 mg/l (50ppm).
